Our Philosophy

Hannah Sushi Bar

Traditional Japanese Haute Cuisine

Japanese cuisine reaches its highest expression when prepared with respect, patience, and attention to detail. We are a restaurant specializing in traditional Japanese haute cuisine, focused on two approaches to dining that lie at the heart of this culture: Kaiseki and Omakase.

In Kaiseki, the menu unfolds as a meticulously planned journey, where each dish dialogues with the season, with the previous course, and with the next. In Omakase, the diner places complete trust in the chef’s judgment, and that trust transforms into an intimate and one-of-a-kind experience.

We work exclusively with seasonal fish and seafood, some of which undergo a maturation process using paper imported from Japan—a technique that concentrates the flavor and refines the texture.                                                                        Each week we incorporate fresh herbs and vegetables imported from Japan, which bring the authentic flavors of Japanese culture to the table.

Our charcoal grill section follows traditional techniques, with constant and precise temperature control.                                                           Tempura is prepared in a nabe, a Japanese copper pot that retains the minimum amount of oil and achieves a light, perfectly crispy fry.

The nigiri are prepared and served individually, one by one, so that diners can enjoy them at their peak and immerse themselves in the essence of Japanese cuisine, trusting in the chef’s mastery.                                                                         The dining experience is complemented by a comprehensive sake menu, Japanese-style beverages, and a carefully curated selection of wines to accompany and enhance each course of the culinary journey.

The space translates into design what the cuisine expresses on the plate. From Tokyo, it draws on refinement, clean lines, and contemporary minimalism; from Kyoto, authenticity, the warmth of natural materials, and the legacy of an ancestral tradition. The result is a serene and elegant atmosphere, where nothing is superfluous and everything has a purpose, and where the focus always remains on the food and the shared moment.

Sushi Bar Hannah does not seek to reinvent Japan, but rather to present it with honesty: seasonal ingredients, techniques faithful to tradition, and attentive, unhurried service. An invitation to slow down, to observe, to savor, and to enjoy every bite as if it were the only one.

Techniques

When preparing dishes such as tempura, we use a copper pot known as a nabe, which originated in Japan. This utensil is distinguished by its ability to retain only a minimal amount of oil during frying, resulting in a final product characterized by its perfectly crispy texture.
